Cole graduated from the University of New Hampshire in 2017 with a B.S. in Nutrition and Dietetics. He was then accepted into a dietetic internship and M.S. program at Rush University Medical Center in Chicago, IL, where he researched the effects of enteral nutrition therapy on glycemic control in postoperative head and neck cancer patients. After becoming a Registered Dietitian in 2021, Cole worked in an outpatient diabetes clinic before joining The Gut Biome Lab. Cole is currently conducting a clinical trial where he aims to explore the effect of fresh watermelon intake on gut and cardiometabolic outcomes in young adults. He hopes to pursue further research on the gut microbiome and its role in the development and management of diseases such as obesity, diabetes, and neurodegenerative disorders. When Cole isn't in the lab, he can be found on the golf course since he enjoys a round of 18.
